Chochlioi boubouristi

Food

A Cretan speciality of snails fried face down in a hot pan with flour, then finished with vinegar.

How to make Chochlioi boubouristi
Serves
4 as meze
Time
Prep 15 min plus purging, cook 10 min

Ingredients

  • 700g live snails, purged, or prepared snails in shells
  • 100g plain flour
  • 100ml olive oil
  • 80ml red wine vinegar
  • 1 tbsp fresh rosemary leaves
  • Coarse sea salt

Method

  1. Rinse the snails in several changes of cold water until the water runs clear, and drain them thoroughly.
  2. Salt the openings and press the open side of each shell into the flour, so the mouth is plugged.
  3. Heat the olive oil in a heavy pan until it shimmers.
  4. Lay the snails in the pan in a single layer, opening side down. That face down position is what boubouristi means.
  5. Fry undisturbed for 3 to 4 minutes, until the floured mouths are sealed and golden.
  6. Add the rosemary, then pour in the vinegar and stand back. Let it bubble hard for 2 minutes until it has almost gone.
  7. Serve hot in the pan juices, with bread and a pin to get them out.
