Skordalia

Food

A thick garlic purée thickened with potato or bread, served with fried salt cod or beetroot.

How to make Skordalia
Serves
6
Time
Prep 15 min, cook 25 min

Ingredients

  • 500g floury potatoes
  • 4 to 6 garlic cloves
  • 1 tsp coarse salt
  • 150ml extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp cold water
  • White pepper

Method

  1. Boil the potatoes whole in their skins until completely tender, 20 to 25 minutes.
  2. While they cook, pound the garlic with the coarse salt in a mortar to a smooth wet paste. Chopped garlic stays harsh and never disappears into the dip.
  3. Peel the potatoes while hot and pass them through a ricer. A food processor turns them to glue.
  4. Beat the garlic paste into the warm potato.
  5. Add the olive oil in a thin stream, beating constantly, as you would for mayonnaise.
  6. Loosen with the vinegar and cold water and season with white pepper.
  7. Serve at room temperature with fried salt cod, beetroot or courgette fritters.

Country sausage stewed down with sweet peppers and tomato, a dish associated with Pelion in central Greece and eaten straight from the pan with bread.

How to make Spetzofai
Serves
4
Time
Prep 15 min, cook 40 min

Ingredients

  • 600g Greek country sausage, loukaniko, cut into thick slices
  • 4 long sweet green peppers, seeded and cut into strips
  • 2 red peppers, seeded and cut into strips
  • 1 onion, sliced
  • 3 garlic cloves, sliced
  • 400g tinned chopped tomatoes
  • 2 tbsp tomato puree
  • 80ml extra virgin olive oil
  • 1 tsp dried oregano
  • ½ tsp chilli flakes, or to taste
  • 1 tsp sugar
  • Salt and freshly ground black pepper
  • 100ml water

Method

  1. Heat 2 tbsp of the olive oil in a wide heavy pan and brown the sausage slices on both sides. Lift them out and set aside.
  2. Add the rest of the oil and cook the peppers over a medium heat for 8 to 10 minutes, until they soften and blister at the edges.
  3. Add the onion and cook for 5 minutes more, then the garlic for 1 minute.
  4. Stir in the tomato puree and let it cook out for a minute, then add the chopped tomatoes, water, sugar, oregano and chilli.
  5. Season, bring to a simmer and cook uncovered for 15 minutes, until the sauce thickens.
  6. Return the sausage with any juices and simmer for another 10 minutes, so the fat from the sausage runs into the sauce.
  7. Taste for salt. Sausage varies a lot, so season at the end rather than the start.
  8. Rest off the heat for 10 minutes and serve warm from the pan with plenty of bread.
